Culinary Dialogue is about how Chinese food experiences can be created to gain a better understanding of Chinese food and culture. The aim is to engage customers with the cultural narratives imbued in particular Chinese foods and to perform these narratives to audiences. Dialogue is created through performance, involving the process of making food and the continual responses and experience from the audience as diners.
The Chinese food narrative is constructed through the process of mapping the food preparation and the deconstruction of its parts. Likewise traditional food stalls were deconstructed into their component parts and reinterpreted as contemporary kitchen and dining environments. In this way, the food making practices, the kitchen environments, the chefs and diners all complete a contemporary food experience as producers, performers, audiences, and lastly, as consumers.
